Grilled Portabella "Sandwich" 2 ways - Vegan and Gluten Free
We are trying to have a vegetarian day at least once a week. I am doing it more extreme making it vegan. The outcome is simply delicious (you really don't want meat after this!). Grilled portabellos (don't forget to marinade them with olive oil, some garlic, thyme and oregano, balsamic vinegar about an hour in advance), roasted red bell peppers, heirloom tomatoes, avocado, young Romaine - yum, yum, yum! Spice lovers, as I am, can add spice mustard or red chili sauce, and the regular bun for the guys:) Happy Summer!
