I discovered Lotus Root for myself relatively recently. I was attracted by its lacy unusual look. I had no idea what to do with it, but I bought it "for experiments":)
The result - crunchy, potato tasting chips that turned out to be also beneficial for women's health.
Just slice them thinly on a mandolin, and bake in a hot over for 3 min - Watch them all the time, as they tend to burn very quickly! My favorite combination is with salted salmon raw, that I am familiar with from my childhood
